I am trying to get the remote app on my Watch to control iTunes on my desktop Mac but when I try and add a device on my Watch, I do not get any response on iTunes to allow me to enter the code to pair? Is it possible that because my Mac is connected to my home network through an Ethernet cable and not through WiFi?

Wouldn't matter as long as they are on the same network .. Did you make sure home sharing is signed on in iTunes and both are using same Apple ID

Well, like most things, if it doesn't work, turn it off and then turn it back on. I turned off home Sharing, then turned it back on and logged back in, and now it works! Thx
