Yes, Bluetooth will allow up to seven concurrent connections, I believe. My iPhone is paired with my car, and my Apple Watch is paired with my iPhone. Both work together just fine. I even use the remote on my Apple Watch to control the music playing over Bluetooth from my iPhone to my car's stereo.

I have my Watch, Garmin vivosmart, when at the gym my BluebudX's, when at the office my Powerbeats2 and in the car my Aukey BT receiver and its all connected to my iPhone...

No issues at all :)
